Happy Friday!

As you know, It was my blog’s 1st Birthday yesterday, and to celebrate I made these cupcakes. You can’t have a birthday without cake, can you?

So, I have been blogging for 1 year and 1 day now, and I have to say that I have learnt a lot! I never dreamed that social media could be so powerful, and not only spread recipes, makeup tips and thoughts, but also connect like-minded strangers in a beautiful way. Blogging is a whole new world, and I intend to live and discover it to the full.

Of course, you know how I like my treats, and when I thought of the perfect way to celebrate my blog birthday, these were just too good to resist. These are lemon cupcakes, filled with blackcurrant jam and topped with buttercream. Heaven in a cute, sugary package in my opinion.

So, let’s get stuck in shall we?

Ginger Fox Cupcakes

Makes: 6          Prep Time: 1 hour

Ingredients:

For the Decoration:

  1. Preheat your oven to 190C. Take a cupcake tray and fill with 6 cupcake cases. In a bowl, add your flour, baking powder and lemon zest.
  2. In a second bowl, add your butter, sugar and egg. Beat with a whisk until light and fluffy. Add in the dry ingredients half at a time, and fold gently so you don’t pop the bubble of air. Place in the cases and bake for 18 minutes, or until springy to the touch.
  3. To make your buttercream, whisk together the butter, icing sugar and milk. split the mixture into 2 and add food colouring to one half. Place in the fridge to cool.
  4. Once the cakes are done, let them cool for 10 minutes before taking a knife and scooping out the middle. Place the jam into the hole and then pop the top back on.
  5. Spread the orange buttercream all over your cakes.
  6. Take a piping bag and a flat nozzle, and pipe the white buttercream onto each side, leaving an orange triangle in the middle of the cakes. Use black icing to create eyes and cut chocolate buttons into quarters for the nose. Enjoy!
