Red Velvet Truffles

Yesterday I came into work with the urge to do some yoga, but in the year I have been working here, I haven’t yet got the confidence to find an open space and workout at lunchtime. I went to the toilet in the morning yesterday and the eureka moment hit me. In the main women’s toilets we also have a shower room, and I took a little peek in there yesterday, and guess what? Perfect size! So at lunch tie yesterday, I did 20 minutes of yoga, then treated myself to a little yogurt. Anyway, my point to this little tale, is that I bet you can find somewhere in your workplace that isn’t used, which you can utilise for a bit of exercise or meditation. It’s nearly Valentines Day, and couples all over the world are preparing to celebrate their relationships and treat each other…

Speak of treats, I made these Red Velvet Truffles at the weekend, and these would make  perfect little gift for your significant other, or even just for yourself! They are made with a white chocolate filling, and coated in dark chocolate, and they are SO creamy. They don’t take too long to make, and this could even be a fun thing you can make together!

Red Velvet Truffles

Makes: 16       Prep Time: 4 Hours

Ingredients:

 

  1. First of all, set out 2 saucepans on the hob, medium heat. In the first, pour in your cream and caster sugar. Fill the second halfway with water.In a mixing bowl, add your white chocolate (broken up) and the butter then place over the pan, making sure that the water doesn’t come into contact with the bowl. Heat until the chocolate is half melted, and the cream is hot. Pour the cream into the bowl of chocolate and mix until everything is melted. Add food colouring until you reach the desired colour.
  2. Pour into a small dish and freeze for 2-3 hours.
  3. Take your mixture out of the freezer and prepare to roll out the truffles. Sprinkle your surface with icing sugar and rub it on your hands to avoid the mixture sticking, and then take a spoon, scoop out some of the mixture and shape it into a ball. Set it down. Repeat with all.
  4. Melt your chocolate with a little coconut oil in the microwave for 1-2 minutes, keeping a close eye on it to make sure it doesn’t burn. Take a fork and coat your truffles in chocolate, and pop them onto a tray. Drizzle with white chocolate and set in the fridge for at least 1 hour. Enjoy!
