It was Sam’s 23rd birthday over the weekend, and in typical Manchester fashion- it rained ALL day. We still had a good day though- viewing some houses in the morning, followed by a few pints in the pub with my family, and a meal with his family in the evening. And you know me, I just had to go that one step further. So I made him his favourite cake. I adapted this recipe from a recipe I saw on BOSH on Facebook, and I added in an extra chocolatey twist to really make this the ULTIMATE CHOCOLATE DREAM. I promise.
Chocolate Fudge Heaven Cake
Serves: 8 Prep Time: 1 hour 30 minutes
Ingredients:
The Cake
- 3/4 Cup Plain Flour
- 1 Cup Cocoa Powder
- 1 tbsp Baking Powder
- 1 tsp Vanilla Extract
- 2 Large Eggs
- 1 Cup Caster Sugar
- 1.5 Cups Milk
- 30g Chocolate broken into pieces
The Icing
- 1 Cup Cocoa Powder
- 1.5 Cups Icing Sugar
- 1/2 Cup Milk
- 1 tsp Vanilla
- Chocolate Fudge Sauce
- Firstly, in a large mixing bowl, combine dry ingredients and mix.
- Add in the wet ingredients and whisk until airy. Pour into 2 greased and cocoa powdered cake tins. Pop in the oven at 180 and cook for 25-30 minutes.
- To make the icing, combine all ingredients in a mixing bowl and beat together. Place this in the fridge for later.
- Once the cakes are out of the oven and let to sit for 10 minutes, remove from the tins and set on a cooling rack and leave for 15 minutes.
- Once completely cooled. Place the first half onto a plate and make incisions with a knife. Spread some chocolate fudge sauce over the cake and let it sink into the holes. Spread some icing over the top of this, and place the other sponge on top. Repeat. Cover every visible surface with icing and swirl it around on the top. Enjoy with custard or ice cream!
