We had a beautiful weekend, and hopefully that’s a good omen for what’s to come this month. We are in the full swing of summer now, and nothing says summer like boozy ice lollies. And if the kids want to try these too, you can swap out the alcohol for some lemonade!
Boozy Beach Ice Lollies
Serves: 8 Prep Time: 10 Minutes
- 150ml Prosecco
- 50ml Bombay Sapphire
- Blue food colouring
- 150g Frozen Mango
- 1 Lime (Juice)
- Mix Prosecco and Bombay sapphire with a dash of blue food colouring and pour halfway up the moulds. Freeze for 15-20 minutes.
- Blend the frozen mango with lime juice and little water. Pour into the moulds and put the tops on. Freeze for a few hours.
