Pumpkin Spice Cupcakes

I did promise you another way to use up your leftover pumpkin as well as Pumpkin Pie, and today we are going to make cupcakes!


Pumpkin Spiced Cupcakes


  • 120g flour
  • 1 tsp cinnamon
  • 1tsp ginger
  • 1tsp nutmeg
  • 1tbsp pumpkin puree
  • 140g caster sugar
  • 1 1/2 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 40g butter
  • 140ml milk

For The Buttercream:

  • 140g Butter
  • 280g Icing Sugar
  • 2 tbsp nutella

Start off by adding all cupcake ingredients apart from egg into a bowl and mixing thoroughly. Beat egg then add to mixture, fold gently. Bake for 15 minutes at 190C.

Leave to cool and make the buttercream by mixing butter and icing sugar. To pipe the cupcakes: use a piping bag and draw streaks of nutella. Fill with the buttercream, and as you pipe the cream onto your cakes they will come out with streaks of chocolately goodness.  Enjoy!
