It finally DECEMBER!
I have been basically in full Christmas mode since the first of November, so I’m super excited that Christmas is finally here. As you know, I have a house now- so I am so excited to be able to share more Christmas content with you this year! Instead of 12 days of blogmas like last year, I’m giving you 24 festive posts to enjoy!

I was going to share my tree decoration for today, but because I am doing that tonight when it’s a bit dark, I will show you the tree properly tomorrow in the light. I bought my tree 3 weeks ago and it has been sitting in the living room waiting to be used for weeks. I have had to try very hard to resist the urge, but I’ve been good. Also, I wanted to make an evening of decorating the tree, so a friday night is the best really.
Anyway, to welcome you to December with some festive cheer, I thought I would share a recipe which only requires 3 ingredients, and you will probably already have these ingredients in your kitchen right now.
Shortbread cookies.
How yummy do these look? Honestly, I’ve made shortbread loads of times before, but this recipe is the most simple, and tastiest I have ever come across. So enjoy!
shortbread Cookies
Makes: 16-20 cookies
Ingredients:
- 55g caster sugar (plus extra for dusting)
- 125g butter
- 180g plain flour
Start off by creaming together the butter and sugar. Mix this for around 3-4 minutes until totally smooth and combined. Don’t worry, you can’t overmix this part.
Add the flour and mix until it all comes together into a dough. Personally, I find it easier to use my hands for this part.
On a floured work surface, turn out the dough and roll in approximately 1cm thick. Cut out your festive shapes and place on a foiled baking tray. Sprinkle with sugar and chill for 20 minutes in the fridge. During this time you can preheat the oven to 170C.
Bake for 15 minute or until golden brown. Let cool completely and enjoy!
