It’s almost Christmas!
Just before the next few days, I wanted to say a huge thank you for all of your support this year, and I hope you have the best Christmas possible!
I made these cupcakes last night and they are honestly like Christmas in a cupcake, if you’re looking for some last minute treats for the big day- these are perfect!
Christmas Cupcakes
Ingredients
- 1 tsp coffee in 4 tbsp boiling water
- 40g cocoa powder
- 1 tsp mixed spices ( cinnamon, nutmeg, cloves, ginger)
- 1tbsp Nutella
- 3 eggs
- 175g butter
- 165g sugar
- 115g flour
- 1tsp baking powder
For the buttercream
- 140g butter
- 280g icing sugar
- 2 tsp red food colouring
Extras
- 150g where chocolate
- Festive sprinkles
First of all, cream together your butter and sugar for the cake. Add eggs one by one and cream until light and airy. Add in all other ingredients and mix. Bake for 15 minutes at 200C. Cool.
Make the snowflakes by melting chocolate and adding to a piping bag. Onto a greaseproof lined tray. Draw out some snowflakes and pop in the fridge to set.
Make the buttercream by creaming together all ingredients.
To assemble: ice the cakes with buttercream, pop the snowflakes on top- and on any ones where the snowflakes have broken you can simply add festive sprinkles!
