The Best Veggie Meatballs

Its the middle of the week and we are step closer to the end of the winter. That’s why today I wanted to share a recipe which is both satisfyingly comforting AND completely healthy!

These veggie meatballs are the best. Honestly, they are amazing and I actually prefer these to normal meatballs (and I’m not just saying that). I’m not going to kid you that these taste exactly like normal meatballs because they don’t, but they don’t need to!

These little gems of flavour are full of antioxidants, cancer fighting vitamins and minerals. They are hearty, filling and completely healthy. You could eat 10 of these and still not consume the same number of calories as 5 regular meatballs.

If you are looking for way to be a little more healthy this week and to start cleansing your body of all those fatty food, then this meal is just what you need.

Veggie Meatballs

Ingredients:

  • 250g cooked lentils OR 100g uncooked
  • 1 onion
  • 1 clove garlic
  • 100g chopped spinach
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 50g sweet potato mash
  • 50g breadcrumbs
  • 1 grated carrot (approx 1 cup)
  • Chia egg ( 1 tbsp chia seeds plus 3 tbsp water)

Start off by cooking your lentils if you are using uncooked. Set aside.

In a sauce pan, add a small dash of oil, and then your onion and garlic. Sweat down until translucent then add the spices, carrot and spinach. Wait until spinach has wilted and add to a bowl.

To the bowl, add the rest of the ingredients and mix together thoroughly. You may need to add more breadcrumbs at this point to form them into balls. Flour a baking sheet and bake at 200 C for 12-15 minutes, or until golden brown.

Serve with your favourite tomato sauce and wholewheat penne pasta!
