This is a super quick recipe – Chicken Tikka Masala! I love curry and this is my all time favourite, easy to make and freezes well!



Chicken Tikka Masala
Ingredients:
For the chicken-
800g chicken
2 tbsp yogurt
juice of 1 lemon
1 tsp garlic paste
1 tsp ginger paste
1 tbsp chopped coriander
3 tbsp tandoori masala
For the curry –
1 onion
1 small red chilli
50g ginger
1 clove garlic
3 tomatoes
1 tbsp sugar
1 1/2 tbsp paprika
1 tsp ginger
1 tsp cumin
1 tbsp tandoori masala
1 tbsp garam masala
1/2 tsp salt
1 tsp coriander leaf
1 tsp fenugreek leaves
70g tomato purée
1 tbsp water
500ml passata
300ml coconut milk
Rice and naan bread to serve
Method:
1. Dice 800g Chicken – marinate with 2 tbsp yogurt, juice of 1 lemon, 1 tsp garlic paste, 1 tsp ginger paste, 1 tbsp chopped coriander, 3 tbsp tandoori masala – marinate for 24 hours
2. Roughly chop 1 onion, 1 small red chilli, 50g ginger, 1 clove garlic and 3 tomatoes in a pan with oil – sweat for 10 mins
3. Make a paste- 1 tbsp sugar, 1 1/2 tbsp paprika, 1 tsp ginger, 1 tsp cumin, 1 tbsp tandoori masala, 1 tbsp garam masala, 1/2 tsp salt, 1 tsp coriander leaf , 1 tsp fenugreek leaves, 70g tomato purée, 1 tbsp water
4. Add paste to pan and cook for 2 mins
5. Add 500ml Passata and simmer 1 hour. Add 200ml Coconut milk, blend until smooth
6. Grill chicken on the barbecue or under your grill until charred
7. Add chicken to sauce and warm through
8. Serve with rice and naan bread or you favourite side dishes!
