Good Morning and Happy April!
I honestly can’t believe we are a quarter of the way through this year already, where did the time go?
I’ve had a bit of a chest weekend to tell you the truth. It all started well on saturday when I had 2 slice of toast for breakfast and then some yogurt, honey and blueberries along with a smoothie for lunch. Heck, I even had chicken and rice for tea. But then Sam and I made the mistake of popping t the shop for some snacks, and ended up with chocolate, crisps and biscuits… oops!
Sunday was no better. I started the day with yogurt and blueberries, and then we spent the afternoon at my nannas house with snacks and beer. Then a full roast dinner later and I was in a full food coma for the night.
Anyway… I write this as I sit here with a grapefruit in front of me, determined not to let this major set back ruin the hard work I have been putting into my diet. I need a hearty, healthy and delicious snack to see me through these days- and Avocado on Toast is the perfect remedy.
Full of healthy fats, vitamins and flavour, this simple snack is the perfect midday lunch for a spring day- without ruining your diet. Let’s get going…
I’m not even sure if I can class this as a recipe, but you know- it has more than 1 ingredient so that’s enough for me!
Ingredients:
- 1 Ripe Avocado
- 2 slices of seeded bread
- a handful of cherry tomatoes
- feta cheese
- Firstly, cut your avocado in half and take out the seed. Mash the avocado with a fork until soft and guacamole- like (that was my best way to describe it)
- Toast your bread. Cut up tomatoes into thin slices and cut up the feta into small cubes.
- Assemble the toast- spread the avocado over the toast and scatter tomatoes and feta on top. Enjoy!
